Protein Cookie Dough Bites

Delicious cookie dough bites coated in decadent dark chocolate.




🔹Cookie Dough
•1/2 c gluten-free oat flour
•1/2 c almond flour
•1/4 granulated erythritol or coconut sugar
•32g Gourmet Vanilla Select Protein
•2 tbsp light butter
•1/4 c unsweetened almond milk
•1 tsp vanilla extract
•2 tbsp sugar-free mini chocolate chips
•pinch of salt if butter is unsalted


🔹Chocolate Coating
•2/3 c sugar-free chocolate chips (Lily's)
•2 tsp coconut oil, melted



•In a microwave safe bowl, gently melt the butter. Stir in the almond milk and vanilla and set aside to cool slightly.

•In a medium bowl, stir together the oat flour, almond flour, protein, salt, and granulated erythritol. Add the butter mixture and stir until a dough forms. Fold in chocolate chips.

•Cover in plastic wrap and place in the freezer for 15-20 minutes. Remove and separate dough into 10 evenly sized balls and return to freezer while you melt the chocolate and coconut oil together.

•Dip each ball in the chocolate using a fork, let the excess chocolate drip before placing the truffle on a piece of parchment paper. Once all the cookie dough balls are coated, place them in the freezer until chocolate hardens and enjoy!
